The one-at-a-time interactions, both desktop and mobile, will auto-advance single-select questions as you see below. We've set the one-at-a-time interaction as the default for mobile to decrease the need for scrolling on smaller screens.
You can switch to the standard interaction wish. To do so go to Style > Layout > Desktop Interaction/Mobile Interaction and select the Standard interaction in both places. Or, if you wish to keep the one-at-a-time interaction but disable the fly-in animation aspect we have a workaround documented in our Disable Fly-In Animations for One-at-a-Time Interaction Tutorial.

I love the one-at-time interaction for desktop and mobile, but I find the quick swipe to the left action to be pretty jarring. Is there a way to keep the one-at-a-time interaction, but have the actual visual be something more like a softer fade in/fade out, or just a simple appear/disappear...? I'd guess probably not, but maybe something to consider as a future feature update. Thanks so much! ~Nick V.

I'm afraid there is not a way to disable the auto-advance feature of the one-at-a-time interaction.
As an alternative, all survey questions could be placed on separate pages (this would affect the desktop presentation) and the interaction could be changed to a standard interaction:

Can I only remove the "auto-advancing" feature? I like the fact that the each question is been displayed in a new page (even follow-up question)
